Where do the cocoa plants grow?

Southeast Asia and Thailand


Cocoa was first introduced to Southeast Asia by the Spaniards who arrived in the Philippines in the late sixteenth century. The cultivation of the plants expanded to other Southeast Asian countries toward the end of the nineteenth century.   Currently the countries that produce cocoa in Southeast Asia are Indonesia, Malaysia, the Philippines, and Thailand.  In Thailand, most of the cocoa is grown in the southern provinces from Chumporn to Narathiwat.

Southeast Asia is certainly a major player in the cocoa market with Indonesia being the third largest exporter of cocoa in the world, ranking after only Ivory coast and Ghana, the first and the second largest contributors to world cocoa production, respectively. 

โกโก้ได้เข้ามาในภูมิภาคเอเชียตะวันออกเฉียงใต้โดยชาวสเปน โดยเข้ามาทางประเทศฟิลิปปินส์ในช่วงปลายศตวรรษที่ 16 ก่อนจะขยายไปยังประเทศอื่นๆในภูมิภาคนี้ในช่วงปลายศตวรรษที่ 19 ประเทศที่ปลูกโกโก้มากในเอเชียตะวันออกเฉียงใต้ในปัจจุบันคือ อินโดนีเซีย มาเลเซีย ฟิลิปปินส์และไทย  โดยในประเทศไทยปลูกมากทางภาคใต้ตั้งแต่จังหวัดชุมพร จนถึงนราธิวาส  ปัจจุบัน อินโดนีเซียเป็นประเทศที่ผลิตโกโก้ได้เป็นอันดับ 3 ของโลกรองจากไอโวรี่โคสท์และกาน่า

Misconception: inaccurate perception of Chocolate



 Pimply faces?
 
Many believe that chocolate is the cause of pimples.  However, the pimple is caused by two major factors. The first is hormonal changes in the body and the second is your genetics, which affects how you skin is built and how it functions.  It has nothing to do with the food that you eat. There have even been scientific studies comparing pimples in subjects who consume chocolate and those who do not, and no significant differences in the level of pimples in the two groups were found.  


Chocolate causes weight gain?

Chocolate certainly can cause weight gain when consumed in excess as does any foods.  Chocolate is a high fat food, so if you need to limit your caloric intake from fat you might need to limit the consumption of chocolate.  However, for normal active people, chocolate can be enjoyed in moderation without any ill effects. 

Is chocolate good for active adults?

A lot of the great components in the cocoa bean are healthy for both our bodies and our minds, including vitamins and minerals as well as Theobromine and Serotonin, which are essential for the functioning of our nervous system and respiratory system.  Moreover, these compounds help relieve stress and allow us to be more focused.  In milk chocolate, we will also be able to get a lot of benefits from the calcium and protein that are present: these will strengthen our bone cells, something that is essential for all adults.  So a regular and moderate consumption of chocolate should be part of the life of active adults, particularly those of us in the modern world who are always on the run. 

Tooth Decay?

Chocolate certainly does not cause tooth decay.   The cocoa butter in chocolate even play a part in protecting the surface of our teeth: it helps to prevent the accumulation of plaque, which is the real culprit for the accumulation of bacteria and tooth decay.   However, we certainly cannot deny that chocolate contains sugar.  However, good quality real chocolate melts really well.   So most of the sugar in the chocolate will not be left as a residue on your teeth, something that is not so for many other foods and drinks. Please remember though that good oral hygiene should always be observed since poor oral hygiene is the real cause of tooth decay.

Consumption of chocolate raises our blood cholesterol level? 

This is certainly not true.  Even though, chocolate contains a high level of fat, the types of fat in chocolate were mainly the Stearic and Oleic fatty acids.  Consumption of these has never been scientifically proven to be linked with blood cholesterol levels.

มีข้อกล่าวหามากมายเกี่ยวกับช็อกโกแลต อีกทั้งความเชื่อผิดๆ ที่ว่าช็อกโกแลตเป็นบ่อเกิดของสิว ซึ่งจริงๆ แล้วการเกิดสิวนั้น ไม่มีผลมาจากการรับประทานอาหารชนิดใดๆ ทั้งสิ้น  หากแต่เกิดจากปัจจัยสำคัญ 2 อย่างคือ การเปลี่ยนแปลงทางฮอร์โมน และขึ้นกับพันธุกรรมของคนว่า แต่ละคนมีลักษณะของผิวพรรณเป็นอย่างไร

ช็อกโกแลตเป็นสาเหตุของความอ้วนหรือเปล่า

อาหารส่วนใหญ่ถ้าทานในปริมาณที่มากเกินไปล้วนทำให้อ้วนได้ทั้งนั้น ช็อกโกแลตก็เช่นเดียวกัน ช็อกโกแลตแม้จะถือว่าเป็นอาหารที่มีไขมันสูง แต่การทานในปริมาณที่พอเหมาะก็ให้ประโยชน์กับร่างกายอย่างมากและไม่มีผลข้างเคียงใดๆ

ช็อกโกแลตเหมาะสำหรับผู้ใหญ่วัยทำงานหรือไม่

ในเมล็ดโกโก้มีส่วนผสมมากมายที่มีประโยชน์ต่อร่างกายและจิตใจ ทั้ง วิตามิน เกลือแร่ และสารอาหารอื่นๆ สารทีโอโบรไมน์และเซโรโทนินมีประโยชน์ต่อระบบประสาทส่วนกลางและการหายใจ นอกจากนี้ยังช่วยลดความเหนื่อยล้าและทำให้มีสมาธิมากขึ้นอีกด้วย อีกทั้งปริมาณแคลเซียมและโปรตีนที่มีมากในช็อกโกแลตนม ทำให้กระดูกแข็งแรง ดังนั้น การทานช็อกโกแลตในปริมาณที่เหมาะสมและสม่ำเสมอ  จึงเหมาะสมกับสภาพการดำเนินชีวิตในปัจจุบันที่ต้องการความคล่องแคล่ว ว่องไว

ทานช็อกโกแลตทำให้ฟันผุหรือไม่

ช็อกโกแลตไม่ได้ทำให้ฟันผุแต่อย่างใด ในความจริงแล้วมีการกล่าวไว้ว่า โกโก้บัตเตอร์ในช็อกโกแลตมีส่วนช่วยในการเคลือบฟันเพื่อป้องกันการก่อตัวของคราบหินปูน (Plaque)ในฟันอีกด้วย อย่างไรก็ตามน้ำตาลในช็อกโกแลตอาจเป็นตัวที่ทำให้ฟันผุได้แต่ก็เหมือนกับน้ำตาลในอาหารอื่นทั่วๆไป นอกจากนี้ สิ่งที่ช็อกโกแลตพิเศษกว่าอาหารและเครื่องดื่มอื่นๆ คือช็อกโกแลตมีคุณสมบัติละลายเร็วในปาก ดังนั้นมันจะไม่เหลือสิ่งตกค้างไว้ อย่างไรก็ดี การดูแลสุขภาพปากอย่างถูกวิธีเป็นสิ่งที่สำคัญที่สุดในการป้องกันฟันผุ

ช็อกโกแลตทำให้ระดับคลอเรสเตอรอลเพิ่มหรือไม่

การทานช็อกโกแลตไม่เพิ่มระดับคลอเรสเตอรอลแต่อย่างใด แม้ว่าในช็อกโกแลตจะมีไขมันอิ่มตัวอยู่ แต่ไขมันในช็อกโกแลตประกอบไปด้วยส่วนหลักๆคือ กรดสเตียริก และ กรดโอเลลิก ซึ่งทั้ง 2 ตัวนี้ได้วิจัยมาแล้วว่าไม่มีส่วนในการทำให้ระดับไขมันไม่ดี (LDL) เพิ่มขึ้นแต่อย่างใด

Chocolate Evolution

In the year 1828, Casparus van Houten devised a process by which cocoa butter was extracted from roasted cacao beans using a patented hydraulic press. Apart from making it possible to produce the valuable cocoa butter, this process yielded a very important by-product—cocoa cake, which that can be ground into cocoa powder.  Casparus’s son Coenraad discovered the process of dutching. In this process, cocoa powder is processed with alkaline salts and is made more soluble in water, less acid, and smoother.



Another very important contribution to chocolate was the invention of the process called “conching” in 1879 by Rodolphe Lindt in his chocolate factory in Bern, Switzerland.  In this process, cocoa beans were ground for three days in a grinder called a conching machine, so called because it resembled a shell. The grinding heated the mixture and the constant movement aerated it. The process of conching produced better quality chocolate that was smooth and could be easily moulded for more efficient production and packaging.

In 1887, Henri Nestle also contributed to the making of milk chocolate that we enjoy today. It was Daniel Peter, who worked with Nestle at his Vevey plant in Switzerland, who thought of the idea of adding condensed milk, which was already being produced in Nestle’s plant, to the chocolate mixture. This was the first milk chocolate, and consumers loved the rich creaminess the milk lent the chocolate. Milk chocolate was very well received by customers all over the world. Peter named his the product “Gala” from the Greek word for “milk” 
ปี 1828  Casparus Johannes van Houten เป็นผู้พบวิธีการแยกโกโก้บัตเตอร์ออกจากเมล็ดโกโก้โดยวิธีบีบอัดด้วยไฮโดรลิก ซึ่งวิธีการนี้ นอกจากจะได้โกโก้บัตเตอร์ออกมาแล้ว ยังได้ก้อนโกโก้ซึ่งสามารถนำมาบดเป็นผง  ให้เป็นผงโกโก้ที่เรารู้จักกันนั่นเอง  ต่อมาบุตรชายของเขา  Coenraad Johannes van Houten เป็นผู้ค้นพบวิธีการ Dutching ซึ่งเป็นกระบวนการใช้ เกลือด่าง เพื่อปรับสีของช็อกโกแลตและช่วยให้ผงโกโก้สามารถละลายน้ำได้ดีขึ้น

Rodolphe Lindt ได้ก่อตั้งโรงงานช็อกโกแลตที่เมือง Bern ประเทศสวิตเซอร์แลนด์ในปี 1879 เขาได้ค้นพบกระบวนการ conching ช็อกโกแลต โดยนำเอาส่วนผสมช็อกโกแลตลงโม่ในเครื่องโม่ลูกกลิ้งเป็นเวลา 3 วัน ทำให้ส่วนผสมต่างๆเกิดความอุ่น และการเคลื่อนไหวจากการโม่ทำให้เกิดการอัดลมเข้าไป ต่อมาได้ปรับแต่งช็อกโกแลตด้วยการเพิ่มโกโก้บัตเตอร์เข้าไป จากการคิดค้นกระบวนการนี้ทำให้เขาได้สร้างเครื่องจักรพิเศษขึ้นมาชื่อว่า Conch ตามรูปทรงที่เหมือนหอย ประโยชน์ที่เพิ่มมาอีกอย่างหนึ่งหลังจากกระบวนการ conching คือ ช็อกโกแลตจะเหลวและสามารถเทลงไปในแม่พิมพ์ได้ ซึ่งทำให้การผลิตและบรรจุรวดเร็วขึ้นมาก

ในปี 1887 เนสท์เล่  สนับสนุนแดเนียล ปีเตอร์ ซึ่งขณะนั้นได้ทำงานอยู่ที่โรงงานเนสท์เล่ในเมือง Vevey  ประเทศสวิตเซอร์แลนด์  ให้ผลิตช็อกโกแลตนมชิ้นแรกของโลก ปีเตอร์ตั้งชื่อสินค้านี้ว่า “Gala” ซึ่งมาจากภาษากรีก แปลว่า “นม”

How does the chocolate go to Europe

Columbus, who made his voyage to the West Indies in 1492, was probably the first European to encounter cocoa, and there is even evidence that he may have brought the bean back with him to Spain.  However, it was not until 1519 cocoa became widely known in Spain.  In that year, Fernando Cortez, another Spanish explorer, defeated the armies of the Aztec Emperor Montezuma. Since cacao beans were considered a valuable possession, indeed, a form of money, they were seized from the defeated and not long afterwards sent back to Spain.

The Spanish royalty were the first to enjoy the taste of cocoa, consuming it mainly as a frothy drink, sometimes adding a little cinnamon and sweetening it with sugar.  There was no record of how this secretly treasured beverage spread to the other countries in Europe, but about a hundred years after the introduction of chocolate in Spain, frothy chocolate drinks had become popular at all of the royal courts in Europe.  At the beginning, chocolate was still reserved mainly for the rich and the aristocracy.

Chocolate History

Maya-Aztec: the Origin of Chocolate

Chocolate was first made almost 4000 years ago in the tropical rain forests of the American continent.  It was produced from the seeds of the cacao tree (Theobroma Cacao), the Latin name meaning “Food of the Gods.”  The first to develop a process for making chocolate were the people of the ancient Mesoamerican civilizations of Mexico and Central America, the Mayas and the Aztecs. Cacao beans were fermented, parched, ground, and mixed with water, chilli and other spices, and corn meal to make a fragrant beverage.

The Aztecs believed that cacao was a food bestowed by the gods to give passage to heaven, and they used cacao seeds in worship. Among the Maya, chocolate was drunk on special occasions, particularly among the royalty and nobility, and thus chocolate came to have an important role in their royal and religious ceremonies.

In the 14 century AD, the Aztecs ruled the major part of Mesoamerica. The center of the Aztecs was in the northern part of Mesoamerica, where it was too cold for cacao trees. However, cacao seeds were a commodity of great value to the Aztecs, and they obtained these seeds by trading with the Maya and also by collecting tribute from vassals and ransom from war captives in cacao seeds, which were thus a form of money.

ช็อกโกแลตถูกค้นพบครั้งแรกเมื่อสี่พันปีที่แล้ว เป็นผลผลิตที่ได้จากเมล็ดของต้นคาเคา ในป่าร้อนชื้นของทวีปอเมริกา จัดอยู่ในตระกูล Theobroma cacao คำนี้ภาษาลาติน แปลว่า "อาหารแห่งทวยเทพ"    ชนกลุ่มแรกที่รู้จักทำช็อกโกแลต เป็นอารยธรรมโบราณที่อยู่ในเม็กซิโก และอเมริกากลาง ชนกลุ่มนี้ได้แก่ชาวมายา และชาวแอซเทค แห่งอารยธรรมเมโสอเมริกา  โดยเก็บเอาเมล็ดมาหมัก  แล้วคั่ว บดและเติมน้ำจนเนื้อเหนียว นำมาผสมน้ำชงเป็นเครื่องดื่ม โรยพริก แป้งข้าวโพด ก็จะได้เครื่องดื่มช็อกโกแลตกลิ่นหอมหวน

ชาวแอซเทคเชื่อว่า  เมล็ดโกโก้เป็นอาหารที่เทพเจ้ามอบให้เพื่อเป็นใบเบิกทางไปสู่สวรรค์  โดยมีการใช้เมล็ดเป็นเครื่องสักการะเทพเจ้า ในขณะที่คนมายาชอบดื่มช็อกโกแลตกันในวาระพิเศษ โดยเฉพาะในหมู่เชื้อพระวงศ์  ชนชั้นสูง ช็อกโกแลตจึงมีบทบาทสำคัญในพิธีของราชวงศ์และศาสนา
ในคริสต์ศตวรรษที่ 14 อาณาจักรของชาวแอซเทค ครอบครองพื้นที่ส่วนใหญ่ของอารยธรรมเมโสอเมริกา และเนื่องจากสภาพภูมิอากาศพื้นที่ที่ชาวแอซเทคอาศัยอยู่ค่อนไปทางเหนือมากกว่าจึงไม่เหมาะที่จะปลูกต้นคาเคา   ชาวแอซเทคจึงต้องซื้อขายเมล็ดโกโก้กับชาวมายา ใช้เมล็ดโกโก้แทนเงินเรียกเก็บค่าบรรณาการจากพลเมืองของตนและเชลยเป็นเมล็ดโกโก้
